Working on some new posts, trying to get things of substance.
Brief note from tonight’s dinner of stir-fry. Tonight was the first night with my new wok, the 16-inch carbon steel flat-bottom, Cantonese-style from The Wok Shop. I did the full oven seasoning, and the wok is a beautiful bronze color, inside and out.
So for part of tonight’s dinner, I cut up a couple broccoli stalks and 2 baby bok choy, and stir-fried them. I made sure the wok was super hot, and the kitchen room filled with a light layer of smoke, but the food was awesome. The veggies were cooked only in a small amount of extra light olive oil ( which apparently has one of the highest smoking points of any cooking oil ), and they had a great flavor and were tender yet crunchy. I was quite pleased, as were the girls.
More coming, I promise, as I start making some serious stock tomorrow. =)
