I’ll admit, this idea is straight out of the Martha Stewart Kids magazine. But it saved the day in my house this afternoon, and could do the same for you one day.
Take as much tofu as you want to eat ( I made too little, so err on the side of caution ), and put it between some clean towels with a weight on top. You can do this up to an hour, or in as little as 5 minutes, but the idea is to get excess water out of the tofu. Starting with Firm Tofu will help your cause. Then cut it into cubes, sticks or whatever shape you want, and place it in a lightly oiled baking pan or sheet, I then drizzled a little olive oil over the top and salted it slightly. Put it in the oven at 375 for about 30 minutes, turning it over once. Take it out and set it on a paper towel to pick up excess oil. Serve warm with ketchup or other sauce. I used some Trader Joe’s General Tso sauce, and that might have been more popular with The Princess than the ketchup. Either way, she loves to dip things. Excellent healthy snack, and the only thing she was saying at the end was “More. More.”
