This recipe is straight out of Marcella Says and is one of my favorite pickles. I make this all the time and keep them in the fridge.
Peel the onions, cross the root end. Put all the ingredients in a pan, except the onions, and bring to a boil. Boil 5 minutes, then add the onions, bring to a boil again and boil 5 minutes more. Retrieve the onions and put in the jar. Discard the sage leaves, and pour the rest of the liquid over the onions. The onions should be covered, if not, use a smaller jar.
These last for as long as you will be able to stand not eating them in the fridge, but do wait a few days before eating.
