Marinated Olives

This is a little recipe from a place called Pasta & Co. in Seattle. If you live there, you probably know of this takeout/deli. They have fantastic marinated olives, and in their book By Request, they give their basic recipe. It is a great introduction to olive marinades, and should set you down the road to nirvana. I made a fresh batch today, which is why I’m writing this.

Ingredients

  • 2 cans, olives ( they call for black, I used a mix of black and green from Santa Barbara Olive Co. )
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 tbsp oregano
  • 1 tsp red pepper flakes
  • 1 tbsp crushed garlic ( I used the garlic press )

Method

Rinse your olives, mix all this stuff together, put the olives in one of your clean Fido jars, and pour the mix over it. Make sure you’ve got liquid to cover the olives, I just add vinegar and oil until I get it. Let rest for 48 hours and enjoy. I keep them refrigerated and they’ll last longer than it will take for you to eat them. Depending on the oil, it may coagulate in the fridge, so bring to room temperature before serving.

I also bottled up some Limoncello and put it in the freezer for apertifs. Tasty!
